The eating plan you will be embracing is low carbohydrate, moderate protein, and high in natural, healthy fat. It is backed by a century of research questioning the calorie based model of obesity and represents a different way of understanding why we gain weight and what we can do about it.
For the past 60 years, we have been told that fat is bad, causes heart disease, makes us fat and should not be a part of our diet. It all started in the 1950’s when a scientist named Ancel Keys claimed that, backed by his research, saturated fat caused heart disease. We now know that Keys manipulated the data to fit his model and that, in fact, the science did not support his claim at all. It was then discovered that his research was backed and paid for by the sugar industry as a way to incorporate and legitimize sugar as an important part of our diets. Soon our governments got on board and created The Canada Food Guide.
This was based on the notion that all calories are equal and since fat contains twice the calories of protein and carbohydrates, we were advised to avoid all types of fat. Instead we were told to load up on carbohydrates, including six to eleven servings each day of bread, cereal, crackers, pasta and other grain products. We believed what we were told and followed a low-fat diet.
As a result, we saw an increase in the rate of obesity, heart disease and stroke, cancer, diabetes and other inflammatory conditions. We got hungrier and lost less weight. We diligently followed the diet rules not realizing that the rulebook was wrong. People with excess weight have been accused of lacking knowledge (being stupid), having no discipline or willpower, poor self-control and even a weak character. This view totally absolves the food industry of any responsibility for aggressively marketing junk food and the government for ineffective dietary guidelines. SO, STOP BLAMING YOURSELF! You are now ready for a paradigm shift.
